Simple to make and so much better than you will find in restaurants
Ingredients
2 Tablespoons Caster Sugar
3 Eggs
2 Tubs Mascarpone
1 Pack Sponge Finger biscuits
Marsala (Sweet) or Brandy
Cocoa powder
Black Coffee
Method
Separate the eggs and keep the whites to one side
Blend the Mascarpone, Sugar and egg yolks with a splash of Marsala
Beat the Egg whites until they are stiff and then add them to the mixture
Make some black coffee and put in flat dish and add a generous splash of Marsala
Soak the sponge fingers in the coffee mixture until just soft and then place in the serving dish
Cover the sponge fingers with the blended mixture
Put in the fridge for at least an hour
Sprinkle the cocoa powder over the top just prior to serving
