Ravioli

Description

This recipe makes the stuffing for approx 1,500 and does take some time but believe me when you eat them it’s worth it!
Ingredients
1 Large Onion
3lb Blade Rib of Beef or very lean shin
3 Pork chops (no kidney)
½ tsp Cinnamon
½ tsp ground nutmeg
Pepper & Salt
3 Chicken cubes
4 tsp Tomato puree
1 Glass red wine (large)
4 Cloves garlic (whole)
5 – 6 eggs
2oz Grated Parmesan
3oz Cheddar cheese
Loaf white bread
Oil and butter

 Method

Chop the onion and fry until soft
Insert the garlic into the beef and tie up
Remove bones from chops and tie together
Add meat to onion and fry, turning until browned
Add Cinnamon,
Add Nutmeg,
Season with Salt & Pepper
Add tomato Puree
Add Stock cubes
Add Wine
Add hot water until ¾ full
Simmer until cooked, this can take
Mince meat
Boil liquid until reduced
Take a loaf of bread and crumb the centre, discarding the crust
Use liquid to moisten the bread crumbs
To the crumbs add the eggs, chess and minced meat
Mix well
